Cashew Date Coconut Energy Ball Recipe

This recipe is a go-to for Mary Anne, who is the head coach of Big River’s START 5k program

1 cup (225 g) packed, soft pitted dates

1 cup (100 g) raw cashews

3/4 cup (60 g) unsweetened fine coconut

1 T coconut oil (optional)

1/8 tsp sea salt (optional)

Instructions

1.     Blend all ingredients until it forms a dough.  ( I use my food processor)

2.     Roll into balls and store in the fridge.  

Makes 15 balls

I like adding coconut oil because I think it smooths the dough out plus helps firm it up in the fridge. 

I love popping one of these as a pre-workout snack, especially for an early morning workout when I’m not really ready to eat.  Quick carb.
